We did not invent all of these recipes and will try to credit the author when provided. Plan accordingly depending on the step of the plan you are on. Very Vanilla Cupcakes

- 1 packet Very Vanilla Shake/Pudding Mix
- 2 egg whites
- 2 ounce(s) water
- 0.25 teaspoon(s) vanilla extract to taste
- 1 packet Splenda (optional)
- 1 teaspoon(s) baking powder
- 1 packet Very Vanilla to use for icing
- 1 egg
Very Vanilla Cupcakes Directions
- Preheat oven to 350 degrees.
- In a bowl, mix together water, Splenda, egg, and vanilla extract until fluffy.
- Slowly pour in Very Vanilla Pudding and mix together.
- Spray olive oil into mini muffin pan and divide mix into at least 6 muffins. May yield more if the mix is very fluffy, divide evenly.
- Bake for 15 minutes, then remove from oven and allow to cool.
- Optional: For Vanilla Icing, make 1 serving of Very Vanilla as a pudding. Chill and then spread a small amount on top of each cooled muffin. Enjoy!
- Note: Makes 2 servings when using 2 packets.
