Hot and Spicy Chili Soup

For 4 people ()

- 1 teaspoon(s) Coriander Seeds
- 2 tablespoon(s) Olive Oil
- 2 Medium Chili Peppers, Sliced
- 2 cup(s) Chicken Broth
- 2 cup(s) Water
- 1 teaspoon(s) Turmeric
- 0.5 teaspoon(s) Ground Cumin
- 4 tablespoon(s) Tomato Paste
- 16 ounce(s) Chicken
- 2 tablespoon(s) Coconut Oil
- 4 tablespoon(s) Fresh Chopped Cilantro
- 0.5 Lime to Juice
- 2 dash(es) Salt and Pepper or to taste
Hot and Spicy Chili Soup Directions
- Cut up and season chicken with salt and pepper. Cook in pan on stove top then set aside.
- In 2 tablespoons of olive oil, heat up coriander seeds to release more of their flavor.
- Once fragrant, add sliced chili peppers and lightly sauté until Chilis are also fragrant
- Add in broth and water, allow to simmer. Season in well with turmeric, ground cumin, salt and pepper to taste.
- Once soup is simmering add in tomato paste and coconut oil, stir to melt and combine. Let soup simmer for about 5-10 mins.
- Reduce heat on the stove and add the juice of half of a lime.
- Place cooked chicken into the bottom of the bowl and ladle the soup over top.
- Garnish with cilantro.
