We did not invent all of these recipes and will try to credit the author when provided. Plan accordingly depending on the step of the plan you are on. Marinated Grilled Vegetable Medley

Ingredients
For 4 people ()

- 1 cup(s) Snow Peas
- 2 tablespoon(s) Low Sodium Soy Sauce
- 2 tablespoon(s) olive oil
- 2 tablespoon(s) Dijon mustard
- 1 teaspoon(s) Gator Garlic
- 0.25 teaspoon(s) Black Pepper
- 1 Medium Eggplant, cut lengthwise into 1/2 -inch slices
- 3 Small Yellow Summer Squash, cut lengthwise into 1/2 -inch slices
Marinated Grilled Vegetable Medley Directions
- In a large Ziploc plastic bag mix together soy sauce, olive oil, Dijon mustard, Gator Garlic and pepper
- Next, add eggplant, squash, snow peas and other veggies to the plastic bag. Seal and shake the bag to cover all of the vegetables; refrigerate for 2 hours, shake the bag after 1 hour to make sure all veggies are covered with marinade.
- Drain the veggies from the Ziploc bag in a colander, don't save marinade. Place vegetables in a grill basket or disposable foil grilling tray.
- Grill, covered, over medium heat for 5-7 minutes or until tender, stirring once.
