Zucchini Pizza Bake

- 4 cup(s) shredded unpeeled zucchini
- 0.5 teaspoon(s) sea salt
- 2 eggs, lightly beaten
- 0.5 cup(s) grated Parmesan cheese
- 2 cup(s) shredded mozzarella cheese
- 1 cup(s) shredded Monterey Jack cheese
- 1 pound(s) ground beef or ground turkey
- 0.5 cup(s) chopped onion
- 1 can Italian-style tomato sauce
- 1 teaspoon(s) Italian seasoning
- 1 green bell pepper, chopped
- 0.5 cup(s) sliced fresh mushrooms
- 0.5 cup(s) sliced black olives
Zucchini Pizza Bake Directions
- Preheat oven to 400 degrees F. Place the zucchini in a colander and sprinkle with salt; let drain for 15 minutes then squeeze out the moisture.
- Combine the zucchini, eggs, Parmesan, mozzarella, and 1/2 cup Monterey Jack in a large bowl. Press the mixture into a greased 9x13 inch baking dish. Bake, uncovered, in the preheated oven for 20 minutes.
- While the zucchini crust is baking, heat a large skillet over medium-high heat and stir in the ground beef and onion. Cook and stir until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the tomato sauce and Italian seasoning.
- Spoon the sauce mixture over the baked zucchini crust. Top with the bell pepper, mushrooms, black olives, and the remaining mozzarella and Monterey Jack cheeses. Return to the preheated oven and bake for 20 minutes or until heated through. Let sit for 5 minutes before serving.
