Chile Chicken Monterey

Ingredients
For 4 people ()
Recipe
- 4 boneless, skinless chicken breasts
- sea salt and black pepper to taste
- any seasoning of your choice for chicken
- 1 tablespoon(s) butter
- 1 small onion, chopped
- 4 ounce(s) Canned mushrooms, or 1/4 pound fresh
- 4 ounce(s) can chopped green chiles
- 4 ounce(s) shredded pepper-jack cheese
Chile Chicken Monterey Directions
- Preheat oven to 350.
- Flatten and season chicken; grill, and keep hot.
- Combine onions, mushrooms, and butter in skillet and saute until onions are tender.
- Stir in chiles.
- Place chicken on baking sheet or pan and top with mushroom mixture. Sprinkle cheese on top.
- Bake 5-10 minutes to melt cheese.
