Cheese Bagels

Ingredients
- 1.5 cups mozzarella cheese, shredded
- 0.75 tbsp baking powder (optional: gluten free)
- 0.25 cup cream cheese, full-fat
- 2 large eggs
- 1.25 cups almond flour
- 0.75 cup Asiago cheese, shredded and separated
- 0.33 tsp salt

Instructions
- Preheat oven to 400F.
- Prepare the baking sheet with a layer of parchment paper and set aside.
- Blend salt, baking powder, eggs, and almond flour in a glass dish until all lumps are gone.
- Microwave the cream cheese and mozzarella in a microwave-safe dish for one minute. Toss and then heat for another 30 seconds.
- Blend melted cheese into the flour mix along with 1/2 cup of Asiago cheese until it thickens.
- Divide the dough into 8 sections of equal size and create mounds out of each.
- Use your fingers to press holes into the middle of each and arrange on the prepped sheet.
- Dust with leftover 1/4 cup of Asiago cheese and heat in the oven for 20 minutes or until the dough begins to brown.
- Serve immediately and enjoy, or refrigerate or freeze leftovers to reheat later.
